For Those Who Can’t Cook…

I’m one of those people who can’t cook… or maybe I just tell myself that because I don’t have the patience for cooking. This has caused somewhat of a problem when hosting parties or going to a party that requires that I bring food.

Therefore, I bring you the easiest, yet most delicious snack you’ll ever have. Brie & jam crust cups. They don’t sound too interesting or even that exciting…but let me tell ya… those little guys are always wiped off the plate in just minutes, maybe even less.

I’ll have to admit, I didn’t just come across this recipe myself. One of my best friends, Karrah, taught me the recipe. I’m pretty sure her mom taught her. Therefore, Mrs. Hurd, if you’re ever reading this, thank you.

So here it goes… the recipe you’ve been waiting for…

BRIE & JAM CRUST CUPS

Prep Time: 3-5 minutes, depending on how fast you can cut the cheese (baha I crack myself up)

Cook Time: 5-7 minutes

Ingredients:
Brie Cheese
Raspberry Jam
Phyllo Crust Cups
… and that’s it.

Directions:
Pre-heat oven to 325 degrees. Whip out a baking tray and line it with aluminum foil for easy cleaning. Place all 12-15 phyllo cups on the tray, all about a 1/2 inch away from each other. Scoop a nickel size of brie cheese and place in each phyllo cup. Scoop a nickel size of raspberry jam and place in each phyllo cup. Place in oven and wait 5-7 minutes until cheese has melted. Serve and prepare for a stampede.

Now, that’s not all you can do with the magic phyllo cups. I learned this weekend I could cook the phyllo cups in the oven with nothing in them. I baked them for 3-5 minutes at 325 degrees and simultaneously microvaved some spinach and artichoke dip. I then took out the crust cups and scoop a quarters size of spinach and artichoke dip in each one and voila! You’ve got two party appetizers that even I could make.

**Note: Mini phyllo crust cups can be somewhat hard to find. They do not sell them at Trader Joes, Sprouts, etc… You have to go to your major super market (Von’s, Shop n’ Stop) for these, which can be found in the frozen section. Also, if you don’t like raspberry jam, strawberry jam works well too!
